This cow has been living in Italy for 150 years, especially in the highest pasture lands where fields are impassable. It is a docile animal with brown coat and a sweet and intense gaze. The uniqueness of its milk derives from its high protein content, particularly casein, which is fundamental important to reach theextraordinary quality standard of our Parmigiano Reggiano DOP Disolabruna® which is sweeter and more aromatic than a normal Parmigiano Reggiano as proved by distinguished studies carried out in several italian universities.
Vacche Rosse (Red Cow)
The antique “Reggiana Race” was, for centuries, the most popular variety of cattle in the Parmigiano Reggiano production areas,so we can quite honestly say it is the “mother” race of this great Italian cheese. It is a large, very elegant animal with a long strong trunk and a mighty but distinct head. What distinguishes this race visually is the colour of its coat which is a uniform darkish red one which is why it has the affectionated nickname of “Red Cow”. The uniqueness of the milk produced by this race derives from the high quantity of proteins, especially casein; as a matter of fact we find large quantities of the K and Beta casein B variations which are essential for the unbeatable quality standard of this ParmigianoReggiano.
