 Now, for the first time, prosciutto di Carpegna, mainly from the Marche region on the Adriatic coast east of Tuscany, is available in the United States. The rosy hams, aged 20 months, are cured with a rub of seasoned lard for a sweet richness, ready for seasonal wedges of melon or fresh figs.
